Grilled Peaches with Whipped Feta and Pistachios.

Make the whipped feta first and keep it cold. Toast the pistachios, grill the peaches over high heat, and assemble just before serving to preserve the hot-cool contrast.

  • 60 gGreek yogurt
  • 30 mlExtra-virgin olive oil
  • 30 mlRunny honey
  • 30 gShelled pistachios
  • 2 g, cirka 1 tskFinely grated lemon zest

Method

  1. Blend the feta, yogurt, and 1 tablespoon olive oil until smooth and airy. Spread the mixture over a serving platter and keep it cool.
  2. Toast the pistachios in a dry skillet until fragrant, let them cool slightly, and roughly chop them.
  3. Halve and pit the peaches. Cut each half into two wedges and toss them with the remaining 1 tablespoon olive oil.
  4. Grill the peach wedges in a very hot grill pan for about 2 minutes per cut side, until deeply marked but still holding their shape.
  5. Arrange the warm peaches over the whipped feta. Drizzle with honey and finish with pistachios, lemon zest, basil, black pepper, and flaky salt. Serve immediately.

More Chairs Than Planned

The drink’s orange and bittersweet edge handle the salty richness of the feta, while the bubbles reset the palate after each bite. Peach draws out Aperol’s fruitier side, and toasted pistachios keep the dish firmly in aperitif territory. One large platter also lasts longer than six separate decisions.
